Two new recipes

This week, in keeping with my new and improved resolution to make more cookie recipes, we made Peanut Butter Chocolate Chip Cookies and Double Chocolate Chip Cookies.  (Pix to follow.)


Peanutbutter Chocolate Chip Cookies

Ingredients:

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup peanut butter
1 cup flour
1 teaspoon baking powder
a pinch of salt
1 cup chocolate chips



Preparation:
Preheat oven to 375ºF (175ºC).

Line a cookie sheet or two with parchment.....definitely a must!

Cream butter and sugars until creamy, then add egg and vanilla and beat until smooth.

Add Peanut butter and continue to beat until combined.

Add flour, baking powder and salt and stir to combine.

Add chips and stir again.

Drop small spoonfuls of dough onto parchment (you should get a dozen per sheet).

Bake 12 minutes or until just golden.

Remove from oven and allow to rest on the sheet 1 minute before removing with a spatula.



 Double Chocolate Chip Cookies
Makes 18 cookies (But I got 22 cookies out of it.  Better double it.  This is not enough for 7 kids and 3 adults at a Friday Night party!)



Ingredients

1/2 cup butter, softened
3/4 cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup semisweet chocolate chips



Method

1. Preheat oven to 350 degrees F.

2. In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

I am printing out your recipes Dawn and leaving them where Super Star might find them. He's the sometime baker!
